The smoke from the red oak of Maine has a nutty smoke with a hint of vanilla which makes it a great wood for grilling or smoking white fish, poultry, and cheese. Many fruit based desserts can be lightly smoked with oak as well. The acorns of our native red oak are a delicacy for deer, squirrels, and other wildlife. The short growing season makes our red oak much denser with a more flavorful smoke than the more common white oak. Simply place the oak chips in a smoker box or aluminum pie plate directly on the heating element of grill. When the chips begin to smoke, add your entrée, cheese, or dessert. Keep a water spritzer bottle handy to control flair ups with delicate meats, cheeses, and desserts. If you are using charcoal, toss a handful of chips directly on the hot coals.
